BROWN BUTTER COUSCOUS by CHEF DAN:
Serves 4
INGREDIENTS:
1 cup couscous
2 tablespoons butter
1/4-cup pine nuts
2 tablespoons white wine
1-1/2-cups chicken broth
1 tablespoon lemon juice
1/4-teaspoon cinnamon
Pinch of saffron
A pinch curry powder
DIRECTIONS:
1. Heat butter in sauce pan over medium-heat.
2. Cook about 3 minutes, or until butter is nice and brown.
3. Add pine nuts and cook 1 minute, stirring occasionally.
4. Add couscous, cook 1 minute.
5. Add wine and broth, bring to a boil.
6. Cover and remove from heat.
7. Let stand 5 minutes.
8. Fluff with a fork.
9. Stir in lemon juice, cinnamon, saffron, curry powder and a little salt and pepper.
