Add shallots and garlic and saute for about 1 minute.

Stir and saute for 30 seconds.
Add remaining tablespoon oil, cauliflower and tomatoes.
Cover and cook, stirring occasionally, for 10 minutes.

MIDDLE EASTERN BRAISED CAULIFLOWER by CHEF DAN
3 tablespoon olive oil
2 shallots, finely chopped
2 garlic cloves, minced
1/2-teaspoon EACH cumin, tandoori Marsala, ground coriander, salt, ground marjoram
6 cups cauliflower-florets, (1-1nch thick)
2 plum tomatoes, diced
