TILAPIA CUCUMBER- RADISH RELISH SANDWICHES ENJOY DAN:

TILAPIA PO'BOY CUCUMBER RADISH RELISH SANDWICHES by CHEF Dan:
Serves 4

INGREDIENTS:
2 (6 Oz) tilapia fillets
2 teaspoon Cajun spice blend
1 egg white
2 tablespoon water
1/2-cup cornmeal
2 tablespoons olive oil, divided
4 whole-wheat hoagie buns, toasted
2 plum tomatoes, sliced
1/2-half red onion, thinly sliced
4 romaine leaves.

CUCUMBER-RADISH RELISH:
1 pint plain low-fat yogurt
1 English cucumber, chopped
6 radishes, sliced in half and then thinly sliced into moons
2 tablespoon tarragon vinegar
1/2-teaspoon paprika
1 teaspoon fresh parsley, chopped
Sea salt and freshly ground pepper to taste

DIRECTIONS:
1.   Mix all relish ingredients and then chill top with chopped parsley.
2.   Sprinkle fish with Cajun spice and salt.
3.   Cut each fillets in half lengthwise.
4.   Whisk egg whites and water into a dish.
5.   Place cornmeal in another dish.
6.   Dip the fish into the egg mixture, then into the cornmeal.
7.   Heat 1 tablespoon oil in a skillet over medium-high heat, when sizzling.
8.   Add the fish and cook until golden brown, 3-5 minutes.
9.   Turn over swirl in the remaining oil and cook until golden brown, about 3-5 minutes.
10.                To assemble the sandwich.
11.                Place 1-2 tablespoons relish mixture on top of each bun.
12.                Top with a piece of fish, tomatoes, onion, and lettuce.
