QUINOA WITH SHRIMP ENJOY DAN:

QUINOA PILAF WITH SHRIMP by CHEF DAN:
Serves 4

INGREDIENTS:
1 tablespoon olive oil
1 onion, finely chopped
2 garlic cloves, minced
1 teaspoon cumin
1-1/4-cup quinoa, rinsed and drained
Sea salt and freshly ground pepper to taste
1 pound shrimp peeled and deveined tails on
2 tablespoons cilantro
Zest from 1 Meyers lemon
2 tablespoons Meyers lemon juice

INGREDIENTS:
1.   Add oil in a sauce-pan over medium-heat; when sizzling.
2.   Add onion and sauté for 4 minutes.
3.   Add garlic, cumin and sauté 1 minute, add quinoa and cook stirring for 1 minute.
4.   Add 2-1/4-cups water and a splash of salt.
5.   Turn to high and bring to a boil.
6.   Cover reduce heat to low and simmer for 15 minutes.
7.   Stir in the shrimp the last 5 minutes of cooking.
8.   Remove from heat, and let stand for 10 minutes.
9.   Transfer to mixing bowl.
10.                Stir in cilantro, lemon zest, lemon juice.
11.                Taste and season with salt and pepper.
