FLANK STEAK WITH GINGER MARINATE ENJOY DAN:

EMORY'S GRILLED FLANK STEAK WITH GINGER MARINATE by CHEF DAN:
Serves 4

INGREDIENTS:
1/4-cup sesame oil
1 thumb-size fresh ginger, thinly sliced
1/4-cup soy sauce
4 garlic cloves, smashed
2 tablespoons red wine vinegar
1/4-cup honey
1 teaspoon dried red pepper flakes
1/2-teaspoon freshly ground black pepper

OTHER INGREDIENTS:
1-1/2-pound flank steak, trimmed of fat
Kosher salt
Freshly ground black pepper

DIRECTIONS:
1.   Score the surface of the steak with 1/4-inch deep knife cuts, about 1-inch apart, across the grain of the meat.
2.   Rub in salt and pepper.
3.   Place steak and marinate ingredients in a large freezer bag.
4.   Coat the steak with the marinate.
5.   Seal the bag and place bag in a bowl.
6.   Chill and marinate for at least 2 hours or overnight.
7.   Once steak has marinated; remove from refrigerator and bring to room temperature.
8.   Heat a lightly oiled over medium-high heat and when sizzling.
9.   Remove steak from marinate, shake of excess, add to pan and cook for 6-8 minutes per side for medium rare.
10.                Transfer to a cutting board, and let rest for 10-12 minutes.
11.                Slice across the grain and serve.
