BUTTERED SPINACH WITH FIG VINEGAR ENJOY DAN:

BUTTERED SPINACH WITH FIG VINEGAR by CHEF DAN:
Serves 4

INGREDIENTS:
6 cups (5 Oz) fresh spinach leaves, washed, dried, and chilled
3/8-cup butter
2 garlic cloves cut into slivers
2 teaspoons fig vinegar
Sea salt and freshly ground black pepper

DIRECTIONS:
1.   Gradually add spinach to a large pot over medium-heat.
2.   Allowing it to wilt between additions.
3.   Cook until tender about 5-8 minutes.
4.   Drain: press to remove liquid.
5.   Whip out pot.
6.   Melt butter in the same pot over medium-heat and when sizzling.
7.   Add garlic and sauté 1 minute.
8.   Add spinach and fig vinegar.
9.   Season with salt and pepper.
10.                Add more vinegar If desired.
11.                Toss to coat.
