STRAWBERRY ICE CREAM ENJOY DAN:

             BERDENE’S STRAWBERRY SHERBET by CHEF DAN:
Serves 6

INGREDIENTS:
4 cups strawberries. (About 1 pound), hulled, halved or quartered if large
1 cup sugar
1/2-vanilla bean split lengthwise
2 cups low fat milk
1/4- cup lime juice
1/3-cup sour cream
1 tablespoons Grand Marnier or any liqueur
1 egg white
A splash of sea salt

SPECIAL EQUIPMENT: An ice cream maker

DIRECTIONS:        (PRE-HEAT OVEN TO 425 DEGREES)

1.   Combine strawberries and sugar in 13X9X2” baking dish.
2.   Scrape the seeds from the vanilla bean and add pod.
3.   Toss to combine.
4.   Roast berries, stirring occasionally, until juices are bubbling, about 15-20 minutes.
5.   Let cool.
6.   Discard pod.
7.   In a blended pure berries,milk, lime juice, sour cream and Grand Marnier and a splash of sea salt, until smooth.
8.   Whisk egg white into the berry mixture.
9.   Process mixture in an ice maker according to manufactures instructions.
