GRILLED WATERMELON WOW!!!!! ENJOY DAN:

               GRILLED WATERMELON SALAD by CHEF DAN:
Serves 4

INGREDIENTS:
1 watermelon (3-5 pounds) cut into 1-inch thick rounds (lay melon on its side, and cut through the rind and flesh
3 cups arugula
1/4-cup feta cheese
2 tablespoons lime juice, divided
3 tablespoons fresh, mint, lemon thyme and basil
1 tablespoon olive oil
1 tablespoon balsamic vinegar
1/4-cup toasted pine nuts
A few pinches of sea salt

DIRECTIONS:
1.   Heat a grill or grill pan over high-heat until very hot.
2.   Grill watermelon rounds on one side only, about 2 minutes.
3.   Transfer to a cutting board and remove rind; cut into wedges.
4.   Toss the arugula with 1 tablespoon lime juice, olive oil and a few pinches of salt.
5.   Place on a platter and top with watermelon, grilled side up.
6.   Drizzle with reaming lime juice,  and balsamic vinegar,
7.   And top with toasted pine nuts, mint, lemon thyme, and basil.
