MY MOM'S CLAY POT FROM THE 30'S OR 40'S ENJOY DAN:

         BAKED BEANS IN MOMS CLAY POT by CHEF DAN:
Serves 6

INGREDIENTS:
2 cups navy beans or pinto beans
6 slices extra lean ham (KIRKLAND BRAND)
1 onion, finely chopped
3 tablespoon molasses
1 (15 Oz can tomato sauce
3 tablespoons soy sauce
1 teaspoon smoke
1/2-cup ketchup
1/4-teaspoon dry mustard
1 tablespoon Worcestershire sauce
1-1/2-tablespoon cider vinegar
1/4-cup brown sugar
1/2-teaspoon sea salt
1 tablespoons cumin powder
1-1/2-teaspoon chili powder

DIRECTIONS:      (PRE-HEAT OVEN TO 325 DEGREES)
1.   Soak beans overnight.
2.   Simmer the beans in the same water until tender.
3.   Approximately 1- 2 hours.
4.   Drain and reserve the liquid.
5.   Arrange the beans in a 2 quart clay pot by placing a portion of the beans in the bottom and layering with ham and onion.
6.   In a sauce-pan combine onion and the next 12 ingredients.
7.   Bring mixture to a boil and pour over the beans.
8.   Pour enough of the reserved bean water to cover.
9.   Cover with clay-pot lid.
10.                Bake 3-4 hours in the pre-heated oven, or until beans are tender.
11.                Remove lid half way through cooking, and add more  reserved liquid if necessary to prevent the beans getting to dry.
