CALF BRAINS FOR THE HALLOWEEN PARTY AT THE ISLAND GREENS ENJOY DAN:

ZOMBIE APOCALYPSE CALF BRAIN SOUP FOR HALLOWEEN PARTY AT ISLAND GREENS                                                                                      by CHEF DAN:
Serves 20

INGREDIENTS:
10 pounds calf brains
1 cup butter
16 cups beef stock
4 cups all purpose flour
12 egg yolks
12 garlic cloves, minced
1 quart of coconut milk
1/2-cup lemon juice
1 bunch of parsley chopped

DIRECTIONS:
1.   Pick the blood vessels and film off the brains.
2.   Soak in cold water overnight, change the water every few hours.
3.   Blanch in boiling water for 2 minutes.
4.   Remove and drain thoroughly.
5.   Season with salt and pepper.
6.   Roll through a pan of flour to coat evenly.
7.   Melt 1/2-cup butter in a skillet over medium-high heat.
8.   When butter is sizzling and foaming; add brains, constantly basting with butter to brown evenly, about 10-12 minutes.
9.   In a stock over medium-high heat add 1/2-cup butter and when hot.
10.                Quickly sauté garlic and parsley.
11.                Add brains, and stock and simmer for 20 minutes.
12.                Just before serving stir in egg yolks and coconut milk
