QUINOA SALAD WITH PEARS ENJOY DAN:

            QUINOA SALAD WITH PEARS AND CHIVES by CHEF DAN:
Serves 4

INGREDIENTS:
     1-cup quinoa
2     -cups chicken broth
2-tablespoon olive oil
2-tablespoon Raspberry Vincotto Vinegar
     1/4- cup fresh chives
2     ripe pears, diced
     2 -tablespoons sour cherries
1/4-cup toasted slivered almonds
Sea salt and fresh ground black pepper

DIRECTIONS:

1.   In a bowl add sour cherries and add hot water and let rest for 10 minutes, drain and set aside.
2.   Bring broth to a boil in a sauce-pan.
3.   Stir in quinoa, reduce heat cover and simmer for 15 minutes.
4.   Whisk oil, vinegar, chives, drained cherries, and salt and pepper.
5.   Toss in diced pears and stir to combine.
6.   Transfer to the refrigerator and chill for 15 minutes.
7.   Serve with toasted sliced almonds.
