CUCUMBER SALAD by CHEF DAN:
Serves
4
INGREDIENTS:
2-
English cucumber, peeled & thinly sliced
1-onion,
thinly sliced
1-cup
Mexican sour cream
2-tablespoons
cider vinegar
1-tablespoon
honey
1-teaspoon
EACH dried dill weed, garlic powder, salt & pepper
DIRECTIONS:
1.
Stir
together cucumber, onion & salt in a bowl.
2.
Plastic
wrap and let stand 30 minutes.
3.
Transfer
cucumber mixture to colander.
4.
Place
in the sink & let water run; then drain.
5.
Place
on paper towels & dry.
6.
Transfer
to a salad bowl.
7.
Whisk
together sour cream, & next 6 ingredients in aa bowl.
8.
Pour
over cucumber mixture.
9.
Stir
to coat.

Chill
covered for 2-24 hours.
