BAKED SHRIMP WITH TOMATO SAUCE ENJOY DAN:


            BAKED SHRIMP WITH TOMATO SAUCE by CHEF DAN:
serves 4

INGREDIENTS:
1-cup orzo pasta
2-tablespoons olive oil
1-onion, diced
2-garlic cloves, smashed
salt & pepper to taste
1-(14.5 Oz) can diced tomatoes
2-plum tomatoes, chopped
1/2-teaspoon EACH cumin & red pepper flakes
1-1/2-pounds shrimp, peeled & deveined
1-tablespoon honey
1/4-cup feta cheese
1/4-teaspoon dried oregano

DIRECTIONS: (PRE-HEAT OVEN TO 425 F)
1.   Cook pasta according to package directions.
2.   Pour oil into a skillet over medium-high heat when sizzling.
3.   Add onion & garlic and sauté for 4 minutes.
4.   Reduce heat: add tomatoes & juices + chopped tomatoes
5.   Simmer for 5 minutes.
6.   Season with & pepper.
7.   Add cumin & next 5 ingredients:
8.   Bake for about 12 minutes.
9.   Serve with pasta & crusty bread.
