CRAB QUICHE ENJOY DAN:


                                      CRAB QUICHE by CHEF DAN:
serves 4

INGREDIENTS
1-(9-inch) unbaked pie crust
2-eggs, lightly beaten
1/2-cup mayonnaise
1/2-cup milk
2 tablespoons flour
1/4-teaspoon EACH salt & Creole seasoning
1-cup diced Swiss cheese
3/4-cup crabmeat
3-scallions, cut on the bias into 1/2-inch slices

DIRECTIONS:
1.   Preheat oven to 450 F.
2.   Line pie crust with a double layer of foil.
3.   Bake 8 minutes, or until lightly brown.
4.   Remove from oven.
5.   Reduce heat to 325 F.
6.   Whisk together eggs, & next 5 ingredients until well blended.
7.   Gently stir in the cheese, crabmeat, & scallions.
8.   Spread into the hot crust.
9.   Bake until edges are puffed, and center is set, about 50 minutes.
10  Halfway through add more Swiss cheese.
11  Let rest 10 minutes.
