COUSCOUS WITH PEAS by CHEF

INGREDIENTS:
1-1/2 cups
water
1-cup
couscous
3-tablespoons
olive oil
1-teaspoon
lemon zest
1-tablespoons
lemon juice
1/4-teaspoon
red pepper flakes
1/2-teaspoon
salt
3/4-cup
frozen green peas, thawed
1/4-onion,
thinly sliced
1/2-ocup feta cheese
1/4-cup
fresh mint
2-tablespoons
pine nuts, toasted
DIRECTIONS:
1.
Bring
water to a boil in a saucepan over high heat.
2.
Stir
in couscous, remove from heat & let stand 10 minutes.
3.
Stir
together olive oil & next 4 ingredients.
4.
Add
to couscous, stirring with a fork.
5.
Toss
peas, sliced onion, feta and mint gently into the couscous.
6.
Cover
& chill for at least 2 hours.
7.
Stir
in toasted pine nuts just before serving.
