INSTANT
POT PORK TENDERLOIN WITH SWEET POTATO by CHEF DAN:
Serves
4-6
MARINATE:
1-1/2-pound
pork tenderloin
1/4-cup
brown sugar
1/4-cup
soy sauce
2
tablespoon olive oil
1-teaspoon
EACH dried onion, cinnamon, and garlic powder
Zip-Lok
bag
DIRECTIONS:
1,
Place pork in the bag and add all marinate ingredients.
2.
Marinate for 4 hours or overnight.
OTHER
INGREDIENTS:
1
tablespoon olive oil
1
cup apple cider
3
sweet potatoes, peeled cubed into 1/2-inch cubes
1
apple, cubed
1
onion, cubed
3
garlic cloves.
Garnish
with sesame seeds
DIRECTIONS:
1.
Turn
instant pot to select function. Add oil and when it reads Hot.
2.
Add
pork tenderloin from bag: toss out marinate.
3.
Sear
each side for 2-3-minutes.
4.
Remove
from pot.
5.
Add
apple cider, scrape up any browned bits from pot.
6.
Add
diced sweet potatoes, and remaining ingredients.
7.
Place
pork tenderloin on top of the vegetables.
8.
Secure
lid on instant pot and turn vent knob to sealed.
9.
Cook
on high pressure for 20 minutes.

Allow
pressure to release for 10 minutes and then do a quick release.

Remove
pork form instant pot and place on a cutting board.

Use
a hand held-immersion blender and blend sweet potatoes, apples and onion until
smooth.

Slice
pork and serve alongside the sweet potato’s apple puree.

Garnish
with sesame seeds;
