BAKED ACORN SQUASH WITH SAUSAGE ENJOY DAN:


            BAKED ACORN SQUASH WITH SAUSAGE by CHEF DAN:
Serves 2

INGREDIENTS:
1-acorn squash
2 tablespoons butter
1/4-cup onions, diced
1/2-pound ground sausage
1/4-cup Panko
2 tablespoons dried cranberries
2-teaspoons pure brown sugar
1-apple, diced
1/2-teaspoon ground sage
1 egg.

DIRECTIONS (PREHEAT OVEN TO 350 F)
1.   Lightly spray a casserole dish with Pam.
2.   Cur squash in half lengthwise, remove and discard seeds.
3.   Place squash cut side down in prepared baking dish.
4.   Bake for 30 minutes.
5.   Add butter a skillet over medium-heat and when sizzling.
6.   Add onion and sauté for4 minutes.
7.   Add sausage and cook until no longer pink.
8.   Remove from heat add all other ingredients except brown sugar.
9.   Shape into 4-equal meatballs.
10  Remove squash form oven.
11  Turn squash over.
12  Sprinkle with brown sugar.
13  Place sausage balls into each cavity of the squash.
14  Cover the baking dish and return to the oven.
15  Bake 15 minutes then uncover and bake 15 minutes more.
