INSTANT POT CACIO E PEPE POLENTA ENJOY DAN:


INSTANT POT CACIO E PEPE POLENTA by CHEF DAN:
Serves 6

1 cup polenta
1-teaspoon salt
1/2-teaspoon freshly ground black pepper
4 cup water
3-tablespon butter
1/2-cup mozzarella cheese, shredded
1/4-cup LORI’S famous homemade basil PESTO

DIRECTIONS:
1.   Into the INSTANT POT whisk the polenta, salt& pepper, 4 cups water.
2.   press SAUTÉ button and bring the mixture to a simmer, whisk again.
3.   Place on the lid and the dial turned to seal.
4.   Cook on high for 9 minutes.
5.   Have all remaining ingredients close at hand.
6.   When the timer goes off, release the pressure manually.
7.   Open the lid.
8.   Using a wooden spoon, whisk polenta until it’s homogenous and creamy.
9.   Whisk in butter, LORI’S pesto to the polenta, then gradually add cheese, whisking until melted.
10  Taste and season with salt and pepper if needed.
