GRANDMA'S CARROT AND CRAISIN SALAD ENJOY DAN:


GRANDMA’S CARROT AND CRAISIN SALAD by CHEF DAN:
Serves 4

INGREDIENTS:
4-cups shredded carrots
2-apples, peeled and cored and sliced into matchstick
1-cup grapes
1/2-cup craisins (dried cranberries)
1-cup toasted walnuts
3 tablespoon lemon juice
3-tableespoons olive oil
1/4-teaspoon EACH and pepper

DIRECTIONS:
1.   Toast the walnuts in a dry skillet over low-heat.
2.   Soak craisins in 1-cup boiling water for a couple of minutes.
3.   Drain well set aside.
4.   Place shredded carrots and grapes to the salad bowl.
5.   Cut apples into matchsticks and add 1 tablespoon lemon juice.
6.   Add to salad bowl.
7.   Add soaked craisins and toasted walnuts to the salad bowl.
8.   In another bowl, combine 2 tablespoons lemon juice, 3-tablespoons oil and salt and pepper.
9.   Pour the dressing over the salad and stir to combine.
10  Refrigerate for 1-2 hours.
