LIME JELL-O WITH CREAM CHEESE AND WALNUTS by CHEF DAN:
Serves
30-40
INGREDIENTS:
3-1/2-cups
boiling water
3
(20 Oz) cans crushed pineapple, drain and reserve juice
6
(3 Oz) package of lime Jell-O
3
(8Oz) packages cream cheese, softened
6
cups miniature marshmallows
2
cup walnuts, chopped
4
cups whipping cream
DIRECTIONS:
1.
In
a large pan, pour 3-1/2- cup boiling water over the Jell-O.
2.
Stir
until dissolved.
3.
Then
stir in 1cup reserves pineapple juice pineapple juice.
4.
Refrigerate
until thickened but not set, about 1 hour.
5.
Meanwhile,
place crushed pineapple and remaining juice in a sauce-pan, and marshmallows
6.
Bring
to a boil, reduce heat, and simmer for 5 minutes.
7.
Remove
from heat and let cool.
8.
In
a bowl, blend softened cream cheese, whipping cream, and lime Jell-O until
smooth.
9.
Mix
in cooled pineapple.
10.
Fold
into Jell-O mixture.
11.
Fold
in chopped nuts.
12.
Pour
into a large container and refrigerate for 1-2 hours or until

Set.
