PORK
CENTER CUT WITH MUSHROOM SAUCE by CHEF DAN:
Serves

INGREDIENTS:
CHOPS:
2
boneless pork center cut 1-inch thick
1
tablespoon olive oil
1
tablespoon butter
1/4-teaspoon
EACH garlic powder, paprika, salt and pepper
MUSHROOM
SAUCE:
1
tablespoon butter
1
onion, diced
1
garlic clove, minced
10
ounces baby portabella mushrooms, sliced 1/2-inch thick
1/2-can
(6 Oz) cream of mushroom soup
1
teaspoon fresh thyme
2
tablespoons lemon juice
1/4-cup
white wine or sherry
1/4-
EACH teaspoon kosher salt and black pepper
DIRECTIONS:
CHOPS:
1.
Heat
oil and butter in a skillet over medium-high heat.
2.
Rub
pork loin with garlic powder, paprika, salt and pepper.
3.
Brown
pork 3 minutes on each side, flip half through.
4.
Set
aside.
MUSHROOM SAUCE:
1.
Melt
butter over medium-heat; add onion, garlic and sauté 4-5 minutes.
2.
Add
mushrooms and sauté for 8-10 minutes.
3.
Add
thyme, lemon juice, wine/sherry, simmer for 5 minutes.
4.
Stir
in mushroom soup, salt & pepper.
5.
Add
pork to mushroom sauce.
6.
Cover and cook 10-12 minutes,
ENJOY DAN: BON-APPETITE!! (Serve with couscous)
