INGREDIENTS:
2
tablespoons olive oil
2
onions, diced
2
potatoes, diced
1
bell pepper, diced
2
cups broccoli florets
10
eggs
Sea
salt and freshly ground black pepper
1
cup pizza blend cheese
DIRECTIONS:
1.
Heat
olive oil in a cast-iron skillet.
2.
Add
onions and sauté for 4-5 minutes.
3.
Add
potatoes, bell pepper and broccoli.
4.
Cook
stirring frequently until vegetables are tender.
5.
Season
with salt and pepper.
6.
Beat
eggs in a bowl, season with a little salt and pepper.
7.
Pour
eggs over vegetables and toss.
8.
Cook
5 minutes over medium-high heat without stirring.
9.
Sprinkle
with cheese and cover.
10.
Cook
for another couple of minutes, until eggs are set.
11.
Cut
into wedges and serve.
