PATTYPAN SQUASH WITH QUINOA ENJOY DAN:


                  PATTYPAN SQUASH WITH QUINOA by CHEF DAN:
Serves 4

INGREDIENTS”
4-pattypan squash
1/2-cup quinoa
1-tablespoon olive oil
1-cup cremini mushrooms, diced
1/4- onion, diced
1/2-teaspoons EACH garlic powder, & dried thyme
1/2-cup goat cheese
Salt & pepper to taste

DIRECTIONS (PREHEAT OVEN TO 350 F)
1.   Cook quinoa according to package directions:
2.   Cut the stem of the top & the bottom removing as little flesh as possible.
3.   Scoop out the seedy center of each squash, leaving a “cup” to place your filling into.
4.   Mix cooked quinoa, & next 5 ingredients to make a stuffing.
5.   In a prepared baking dish, place the pattypan squash.
6.   Using your hand squeeze together a ball of stuffing, like making a snowball.
7.   Place ball into each cup of pattypan cup.
8.   Season with salt & pepper.
9.   Bake in preheated oven for 35-45 minutes
10  Remove pattypan’s from the oven & sprinkle on cheese.
