INDIAN SPICED CHANA SALAD ENJOY DAN:


                          INDIAN SPICED CHANA SALAD by CHEF DAN:
Serves 8

INGREDIENTS:
2-cups         chana dal beans (chickpea)
cups water
2-tablespoons olive oil
1-tablespoon lime zest
1/4-teaspoonEACH cumin seeds, & mustard seeds
1-red onion, diced
1-jalapeno, ribs & seeds removed & diced
2-tomatoes, diced
1/3cup fresh cilantro
1/2-teaspoon EACH garam masala & tandoori masala
1/4-teaspoon salt
2-teaspoons lime juice

DIRECTONS:
1.    Sort & rinse the chana dal.
2.   Place in a pot & add water.
3.   Stir in chana dal & bring to a low boil.
4.   Reduce heat & bring to low boil on medium-low & cook for 25 minutes.
5.   Drain & transfer chana dal in a large bowl; set aside.
6.   Add oil to a skillet over medium-high heat & when sizzling.
7.   Add onion& jalapeno & cook for 3-4 minutes.
8.   Add lime zest, cumin seeds & mustard seeds, stir & cook for 2 minutes.
9.   Transfer mixture into a bowl with cooked chana dal.
10  Add tomatoes, & next 5 ingredients.
11  Stir well to combine.
12  Garnish with additional minced cilantro.
