INDIAN TANDOORI CHICKEN CHICKEN ENJOY DAN:


                         INDIAN TANDOORI CHICKEN by CHEF DAN:
2-pounds chicken leg about 8 legs

INGREDIENTS:
2-pounds chicken legs, no skin
2-cups yogurt
2-tablespoons EACH olive oil, lemon juice, minced fresh garlic,
& minced fresh ginger
2-teaspoon EACH ground cumin, coriander & sumac
1/4-teaspoon EACH cayenne pepper, & cardamom
1-teaspoon EACH red food coloring & garam masala
Salt & pepper to taste
Fresh cilantro for garnish

DIRECTIONS: (PREHEAT OVEN TO 400 F)
1.   Cut very shallow little lines into the de-skinned chicken legs.
2.   Add to a zip-lock bag.
3.   Mix yogurt & next 10 ingredients.
4.   Add everting to the chicken and mix well & squeeze a lot.
5.   Let marinate for at least 8 hours or overnight.
6.   Remove some of the marinate before cooking the chicken.
7.   Place legs on prepared baking sheet.
8.   Season with salt & pepper.
9.   Bake in pre-heated oven for about 30 minutes.
