QUINOA AND SHRIMP STIR-FRY ENJOY DAN:


           QUINOA WITH SHRIMP STIR-FRIED by CHEF DAN:

Serves 4  

 

INGREDIENTS:

 

1 cup quinoa

1 cup chicken broth

1 cup water

1 garlic cloves, crushed

1/2-teaspoon salt

 

 

DIRECTIONS:

1.   Bring to boil the, chicken broth, water, garlic, and 1/2-teaspoon salt.

2.   Add quinoa.

3.   Reduce heat, cover and simmer until the liquid is absorbed and quinoa has tails showing, about 15 minutes.

4.   Set aside to cool.

 

INGREDIENTS:

1 pound shrimp, raw, peeled and deveined

1 bell pepper, diced

1 tablespoon fresh ginger

3 garlic cloves, minced

1 cup snap peas

1 onion, diced

1 cup fresh mushroom sliced

8 asparagus spears, trimmed and on the bias in 1-inch pieces

1 tablespoon sake or mirin

2 tablespoon olive oil

1 tablespoon lemon juice

 

DIRECTIONS;

1.   In a wok add oil over medium-high heat, until sizzling.

2.   Add onion, ginger, garlic, and bell pepper sauté 5 minutes.

3.   Add asparagus, mushrooms and cook until asparagus is tender.

4.   Add quinoa, and cook for 2-3 minutes.

5.   Add peas, shrimp and sake, cover and cook for 2 minutes.

6.   Add lemon juice and cook 1 minute.
