EGGPLANT PIZZA WOW!!! ENJOY DAN:


                   EGGPLANT PIZZA by CHEF DAN:

Serves 4

 

INGREDIENTS:

 

1 eggplant, sliced into thin rounds

1 cup parmesan cheese

1 cup Panko

1 cup marinara sauce

3 egg whites

Fresh spinach or basil

 

DIRECTIONS:     (PRE-HEAT OVEN TO350 DEGREES)

 

1.  Min a bowl mix 1/2- the Parmesan cheese into the Panko.

2.  In another bowl add egg whites.

3.  Dip eggplant into egg whites, then coat with Panko mixture.

4.  Put on a greased baking sheet and drizzle with a little oil.

5.  Bake for 12 minutes or until crispy on one side.

6.  Turn each piece over, drizzle with a little oil and bake for about 7 minutes longer.

7.  Top each slice with a little marinara sauce, remaining Parmesan cheese, spinach or basil.

8.  Bake another 5-8 minutes.
