WHAT'S FOR DINNER TONIGHT???????? SALAD WITH TOMATOES AND ASPARAGUS. ENJOY DAN:

CHERRY TOMATO AND ASPARAGUS SALAD by CHEF DAN:


serves 4-6



INGREDIENTS: I ADDED A HEAD OF LETTUCE AND PEANUTS ENJOY



1 pound asparagus, trimmed and halved

1 cup cherry tomatoes

1/2- cup feta cheese

1 ripe avocado, cut into cubes

1 cup each basil and mint leaves

1/4- cup olive oil

2 teaspoons Dijon mustard

1/2- teaspoon S&P





DIRECTIONS:

1.Boil asparagus in a large pot of salted water for 2 minutes.

2.Drain and rinse with cold water.

3.Mix asparagus with remaining ingredients in a large bowl, stirring well to coat evenly with dressing.
