ACCORDING TO LORI KATZATOR THIS IS MIDDLE EASTERN. P.T.L. ENJOY DAN

WILD RICE PILAF by CHEF DAN:


serves 4-6



INGREDIENTS:



2 cups wild rice

2 teaspoons olive oil

3 garlic cloves, crushed

1 red onion, sliced

1/2- teaspoon cumin

1/2- teaspoon coriander

1/2- cup raisins

1 carrot cut into matchsticks

1 cup cabbage, diced

1/4- cup water

1 bell pepper, diced

2 tablespoon soy sauce

1 tablespoon rice wine vinegar

2 teaspoons fresh grated ginger

1 teaspoon crushed red pepper flakes

1/2- cup cilantro

1//2- cup whole peanuts



DIRECTIONS: ( Cook wild rice according to directions on the package)



1.Dry toast peanuts in a small skillet until golden brown. Set a side.

2.Over medium-high heat sauté onion and garlic until onions are transparent.

3.Add cumin and coriander and stir.

4.Add raisins, carrots, cabbage,and water. Stir well.

5.Cover reduce heat to low, simmer for about 4 minutes.

6.Remove from the heat.

7.In a mixing bowl, combine sauté mixture with cooked wild rice, bell pepper,cilantro, and toasted peanuts. Mix well.

8.In a small bowl, whisk together remaining ingredients.

9.Add to pilaf mixture, stir well and enjoy.

10.salt and pepper to taste.
