GREEN CURRY WITH BEEF by CHEF DAN


serves 4-6



INGREDIENTS:



1 tablespoon olive oil

1 -2 pounds sirloin steak, cut into thin stripes

1 (19oz) can coconut milk-MAE PLOY is the best

2 tablespoons green curry paste

2 tablespoons fish sauce

1 tablespoons brown sugar

1 cup peas (frozen OK)

2 tomatoes, quartered

1 cup fresh basil leaves, chopped



DIRECTIONS:



1.Add the oil to a large skillet and heat over medium-high heat.

2.Quickly brown steak and set aside.

3.In the same skillet add the coconut milk and bring to a boil.

4.Add curry paste, stirring until dissolved and fragrant.

5.Add onion, fish sauce and sugar, stirring, cook for 2-3 minutes.

6.Add peas, tomatoes, and beef.

7.Cook until just heated through.

8.Stir in basil and cook until wilted.



SERVE OVER RICE NOODLES OR JASMINE RICE
