GOAT CHEESE BRUSCHETTA WITH CHERRIES AND MINT ENJOY DAN:

GOAT CHEESE BRUSCHETTA WITH CHERRIES AND MINT by CHEF DAN:
Makes 4 servings:

INGREDIENTS:
2 cups fresh cherries, halved
3 teaspoons olive oil
1/4-fresh mint leaves, minced
1/4-cup lightly packed basil leaves, thinly sliced
1 fresh baguette, sliced on the bias into-1-inch pieces
1/4-cup goat cheese, at room temperature
1/4-cup Lindt Dark Chocolate (85% coco or better) chopped

DIRECTIONS: (PREHEAT THE OVEN TO 450 F)
1.   In a bowl, toss together cherries, oil, mint and season with a splash of salt.
2.   Spread on a baking sheet.
3.   Bake in a preheated oven until juices began to caramelize, about 17 minutes.
4.   Toast the baguette and spread cream cheese over the baguette.
5.   Top with cherry mixture.
6.   Garnish with chocolate.
