FATHERS DAY THAI GRILLED-SMOKED CHICKEN ENJOY DAN:

FATHER’S DAY THAI GRILLED-SMOKED CHICKEN by CHEF DAN:
Serves 4-6

INGREDIENTS:
1 tablespoon red curry paste
1-teaspoon sweet chili sauce
3 tablespoons olive oil
3 garlic cloves, minced
2 teaspoon fish sauce
2 tablespoon fresh basil
5 pound chicken

DIRECTIONS:
1.   Combine red curry paste with the next 3 ingredients.
2.   Add to a microwave bowl and microwave for 30 seconds.
3.   Whisk until combined; then add basil and set aside.
4.   In a pot add chicken and add marinate ingredient; rub over chicken.
5.   Marinate overnight.
6.   Before grilling remove from refrigerate 30 minutes before grilling.
7.   On a Traeger grill start the grill on Smoke with the lid open until fire is established about 5 minutes.
8.   Set the temperature to 350 F and preheat with lid closed, 10- 15 min.
9.   Place the chicken on the grill grate , breast side up and smoke-grill about 1-1/2-hours or until internal temperature is 165 F
10.                Allow to rest for about 5 minutes.
