BIBB
LETTUCE CHICKEN AND CHERRY SALAD WITH HORSERADISH DRESSING

Serves
4
INGREDIENTS:
1/2-cup
mayonnaise
2
tablespoon lime juice
2
tablespoon horseradish
2
teaspoons anchovy paste
Kosher
salt and freshly ground black pepper to taste
1
tablespoon olive oil
1/2-cup
Panko
1/8-teaspoon
cayenne pepper
2
cups cooked chicken, cubed or shredded
6
cups bibs lettuce, from one large head
2
cups cherries, pitted and halved
5
radishes, thinly sliced
1/4-cup
fresh chives
DIRECTIONS;
1.
Place
the mayonnaise and next 4 ingredients in a blender and blend until smooth.
2.
Set
aside.
TO
MAKE THE SALAD:
1.
Heat
oil in skillet over medium-high heat and when sizzling.
2.
Add
Panko and cook; stirring frequently until golden brown, 4-5 minutes.
3.
Season
with salt & pepper, and cayenne transfer to a paper towel and let cool.
4.
Combine
chicken, lettuce, cherries, radishes, 1/2-the Panko and 1/2-the chives in a
salad bowl.
5.
Drizzle
with the dressing and gently toss to coat.
6.
Sprinkle
with the remaining Panko and chives.
