CREAMY
SOUR CREAM CHICKEN CASSEROLE by CHEF DAN:
Serves

INGREDIENTS:
4
boneless, skinless chicken breast, boiled and cubed
1
cup sour cream
1/2-package
cream cheese
1
(10-3/4 Oz) can cream of chicken soup
1
(10.5 Oz) can cream of mushrooms soup
25
Ritz crackers
1-1/2-cups
of cheddar cheese
Kosher salt and freshly ground black pepper to
taste
DIRECTIONS: (PREHEAT OVEN TO 350 F)
1.
In
a skillet over medium-low heat combine cubed chicken and the next 4 ingredients,
stir half of the Ritz crackers.
2.
Mix
well and cook until the cream cheese has melted.
3.
Transfer casserole mixture to a casserole dish
sprayed with Pam.
4.
Top
with remaining Ritz crackers.
5.
Bake
in preheated oven for 15-20 minutes or until cracker turn golden brown.
6.
The
last 5 minutes of cooking add Cheddar cheese.
