HONEY MUSTARD TOFU TENDERS by CHEF DAN:
Serves

INGREDIENTS:
1
(14 Oz) package extra firm tofu
1/4-
cup egg beaters
2 teaspoons
curry powder
2
teaspoons Franks Red Hot
1
teaspoon EACH Old Bay, garlic powder, onion powder,
3/4-
Panko bread crumbs
Sea salt
and freshly ground black pepper to taste
Cooking
spray
1/3-cup
non-fat yogurt
3
tablespoons Dijon mustard
3
tablespoons honey
1
tablespoon Meyer lemon juice from 2 lemons
DIRECTIONS: (PRE-HEAT OVEN TO 425 DEGREES)
1.
Cut
tofu block lengthwise.
2.
Cut
each piece in half horizontally, then cut each stack crosswise again into
5-inch tender.
3.
You
will have 20 strips, 2-inch by 1-inch.
4.
In
a bowl combine egg whites, curry powder, hot sauce, Old Bay, garlic powder, and
onion powder.
5.
Combine
Panko and salt and pepper in another bowl.
6.
Dip
the tofu stripes into the egg mixture, then coat with Panko, mixture.
7.
Arrange
on pre-pared baking sheet.
8.
Generously
coat the tofu with cooking spray.
9.
Bake
for 10-12 minutes.
10.
Flip
the tender over and continue cooking for 10-12 more minutes.
11.
Meanwhile,
whisk together yogurt, mustard, honey, and lemon juice in a bowl.
12.
Serve
the tofu in the dipping sauce.
