AVOCADO WITH SILKEN TOFU DRESSING ENJOY DAN:

       AVOCADO AND SILKEN TOFU DRESSING by CHEF DAN:
Makes 3 cups

INGREDIENTS:
1 (12.3 Oz) package or organic silken tofu

SALAD DRESSING:
Tofu
1 avocado, peeled and seed removed
1/2-cup buttermilk
1/4-cup ketchup
2 tablespoons rice wine vinegar
1 tablespoon Dijon mustard
Juice from 1 Meyer lemons
1/4-scallions cut into small pieces
2 garlic cloves
A squirt of Sriacha Chili sauce

DIRECTIONS:
1.   Add all ingredients into a blender and combine until smooth.
2.   Store in air tight container.
