AVOCADO AND RADISH SALAD by
CHEF DAN:
Serves
4
INGREDIENTS:
2
bunches of radishes
1/2-cup
fresh lime juice
1
ripe avocado
2
cloves garlic, minced
1
red onion, thinly sliced
4
cups mixed baby greens
Sea
salt and freshly ground black pepper to taste
DIRECTIONS:
1.
Trim
the radishes, and then thinly slice.
2.
Put
the radishes and garlic in a bowl with the lime juice.
3.
Quarter,
peel and pit the avocado, and cut into thin slices.
4.
Mix
gently the avocados with the radishes in the lime juice.
5.
Fold
in the onion, season with salt and pepper.
6.
In
a large bowl add the baby greens.
7.
Add
avocado, radish mixture to salad bowl and gently toss to coat.
