CURRIED BEEF STEW IN THE CROCK POT FOR TREE FARM CREW

INGREDIENTS:
1/4-cup
grape-seed oil
6
pounds beef stew meat
4
onions, chopped
5
garlic cloves, minced
2
tablespoon red curry paste
2
Serrano peppers, chopped
5
potatoes cut into chunks
5
carrots cut into chunks
2
(19 Oz) can Mae Ploy coconut milk
1/4-cup
fish sauce
1/4-cup
tamarind concentrate
1/4-cup
brown sugar
1/2-cup
dry roasted peanuts.
DIRECTIONS:
1.
In
a stock-pot over medium-high heat add oil and when sizzling.
2.
Add
red curry paste and when fragrant add beef and brown on all sides.
3.
Add
onions, garlic and sauté for 4 minutes.
4.
Add
potatoes, carrots, coconut milk, fish sauce, tamarind, Serrano peppers and
brown sugar.
5.
Stir
well and bring to a boil.
6.
Pour
stew into crock-pot and cook on high for 5-6 hours.
7.
Garnish
with dry roasted peanuts.
