FRUIT SALAD WITH HONEY DRESSING by CHEF DAN:
Serves 4
DRESSING INGREDIENTS:
1/2- cup Greek yogurt
1/4-cup light mayonnaise
2 tablespoons DAN’S honey
2 tablespoons lemon juice
1/2-teaspoon dry mustard
1 teaspoon vanilla extract
Sea salt and freshly ground black pepper
SALAD:
1 heat of romaine lettuce roughly chopped
1 avocado, peeled and sliced
1 banana, sliced
1 pear, peeled and diced
2 cups fresh pineapple, peeled and diced
10-12 strawberries, halved
1 apple, cored and diced
1/2-cup toasted pine nuts
DIRECTIONS:
1. In a bowl whisk together all mixing ingredients.
2. Set aside.
3. Place all the fruit and the pine nuts in a large bowl and toss to combine.
4. Add the dressing and toss to combine.
