ARUGULA SALAD WITH LEMON DRESSING by CHEF DAN:
Serves 4
4 cups baby arugula
1/3-cup grated parmesan cheese
2 tablespoons lemon juice
1 cup jarred artichokes packed in water
1 cup cherry tomatoes
2 tablespoons olive oil
DIRECTIONS:
1. Blend parmesan cheese, lemon juice, and olive oil in a blender.
2. Season with kosher salt and freshly ground black pepper
3. In a bowl add arugula, artichokes, and cherry tomatoes.
4. Toss with enough dressing to coat.
