STUFFED CHICKEN BREAST ENJOY DAN:


                        STUFFED CHICKEN BEAST by CHEF DAN:
Serves 4

INGREDIENTS:
1-cup pepper jack cheese, shredded
1/2-cup Mexican sour cream
1 (4.5 OZ) green chilies, chopped
1-(1.25 Oz) package taco seasoning
1/2-teaspoon Creole seasoning
4 boneless-skinless chicken breasts
2 tablespoons olive oil

TOPPINGS:
Mozzarella cheeses, scallions, and fresh snipped chives

DIRECTIONS: (PREHEAT OVEN TO 400 F)
1.   In a bowl mix pepper-jack cheese, sour cream, chilis, Creole seasoning, + 1 tablespoon taco seasoning.
2.   In the thick-side of each breast, cut a 3-inch long pocket to within 1/4-inch of opposite side of breast.
3.   Spoon about 1/3cup cheese mixture into pocket in each chicken.
4.   In a bowl, mix remaining taco seasoning with the olive oil.
5.   Place chicken on a prepared baking rack, brush with oil mixture.
6.   Roast uncovered for about 25 minutes or until internal temperature is 160 F.
7.   Top with Mozzarella cheese and bake for about 5 minutes more or until cheese has melted.
8.   Top each breast with scallions and chives.
