OVERNIGHT FRENCH TOAST ENJOY DAN:


                     OVERNIGHT FRENCH TOAST by CHEF DAN:
Serves 6           (DAY AFTER CHRISTMAS BREAKFAST)

INGREDIENTS:
1-(8 Oz) old crusty baguette, cut into 1-inch cubes
1 ripe banana
1 cup low fat milk
3 eggs
3 egg whites
2 tablespoons pure maple syrup
1 teaspoon EACH vanilla extract, nutmeg, and cinnamon
Splash of salt
1- (10 Oz) bag frozen mixed buries, thawed
1/2-cup walnuts, chopped
2 tablespoon EACH brown sugar, and cold butter, cut into small chunks

DIRECTIONS: (PREHEAT OVEN TO 375 F)
1.   Arrange bread cubes in a prepared baking dish.
2.   Using a fork mash banana in a bowl until smooth.
3.   Whisk in milk and next 8 ingredients until combined.
4.   Pour mixture over bread cubes.
5.   Sprinkle berries over mixture, cover with tin foil and chill overnight in the fringe.
6.   Combine walnuts and brown sugar in a bowl.
7.   Add butter; using your fingers, mix until crumbly.
8.   Remove foil from chilled bread cubes; sprinkle with walnut mixture.
9.   Replace with foil cover.
10  Bake in preheated oven for 30 minutes.
11  Remove foil; bake until golden brown, about 10 minutes more.
12  Let stand at rooms temperature for 5 minutes.
