CRANBERRY SAUCE WITH GINGER ENJOY DAN:


               CRANBERRY SAUCE WITH GINGER by CHEF DAN:
Yields 2 cups

INGREDIENTS:
2-(10 Oz) bag frozen cranberries
Zest of 1 lime
1 tablespoon lime juice
Zest of 1 lemon
1-tablespoon lemon juice
1-thumb-size fresh ginger, peeled and grated
1/4-teaspoons ground cardamom
3/4-teaspoons ground cinnamon
2- whole star anise
4 whole allspice berries
1-cup pure maple syrup

DIRECTIONS:
1.   Gather allspice and star anise a 4-inch square cheesecloth and tie into a small sack.
2.   Add sack, along with remaining ingredients into a sauce-pan.
3.   Bring to a full boil.
4.   Reduce heat to a gentle boil and allow sauce to cook, uncovered until thickened about 30 minutes.
5.   Allow sauce to cool before transferring to a container.
6.   Store in the refrigerator.
