CRANBERRY ORANGE SAUCE ENJOY DAN:


                    CRANBERRY ORANGE SAUCE by CHEF DAN:
Serves 12

INGREDIENTS:
3-cups fresh or frozen whole cranberries
1/4-cup granulated sugar
1 tablespoon EACH pure maple syrup, and fresh grated ginger
1 cinnamon stick
1/8-teaspoon salt
2-teaspoons orange zest
1/4-cup fresh orange juice

DIRECTIONS:
1.   Combine cranberries, and next 5 ingredients + orange juice.
2.   In a skillet over medium-heat add cranberry mixture.
3.   Stirring occasionally until the cranberries burst, and liquid stats to reduce, about 15 minutes.
4.   Reduce heat to low and simmer until liquid has a thick consistency about 12 minutes more.
5.   Remove from heat and let cool for about 2 hours.
6.   Sauce will thicken as it cools.
7.   Then sprinkle with orange zest.
