KALE APPLE AND QUINOA SALAD ENJOY DAN:


                 KALE APPLE AND QUINOA SALAD by CHEF DAN:
Serves 4

INGREDIENTS:
1 cup quinoa
6 cups kale, chopped, remove thick ribs, before chopping
2-apples, cored and chopped
1 cup walnuts, toasted
1/2-cup dried cranberries
1/2-cup goat cheese
A pinch of red pepper flakes

DRESSING:
3-tablespoons olive oil
1/4-cup lemon juice
2-tablespoon pure maple syrup
1-1/2-teaspoon Dijon mustard
Salt to taste

DIRECTIONS:
1.   Cook quinoa according to package directions.
2.   Whisk together all dressing ingredients in a bowl or Mason jar.
3.   Add chopped kale to a salad bowl.
4.   Then pour 3/4-dressing over the kale; toss until kale is evenly coasted.
5.   Cover and chill for 15-20 minutes.
6.   Remove salad from the frig, add apples, quinoa, toasted walnuts and cranberries.
7.   Pour remaining dressing over the salad and toss.
8.   Add goat cheese and toss lightly.
