WHOLE CHICKEN ON THE TRAEGER SMOKER

INGREDIENTS:
1
(5 pound) whole chicken
1/2-cup
butter, room temperature
2
scallions, white and green part finely minced
2
cloves garlic, smashed
1
spring EACH fresh oregano, thyme, coriander, rosemary, and sage
1
tablespoon lemon juice
1/4-cup
chicken seasoning
DIRECTIONS:
1.
In
a bowl, combine the butter and next 8 ingredients plus 2 tablespoons chicken
seasoning.
2.
Remove
any gilets from cavity of the chicken.
3.
Wash
the chicken inside and with cold running water.
4.
Dry
thoroughly with paper towels.
5.
Sprinkle
remaining chicken seasoning into the cavity of the chicken.
6.
Slip
a few springs of fresh herbs into the cavity as well.
7.
Smear
the outside of the chicken with the butter-herb mixture.
8.
Start
the Traeger grill on smoke with the lid open for about 5 minutes.
9.
Set
temperature to 400 F and preheat, lid closed, for 10 minutes.

Oil
the grated with Pam.

Place
the chicken on the grill, breast-side up, close the lid.

After
1 hour, left the lid; if the chicken is browning to quickly, cover the chicken
with aluminum foil.

Close
the lid and continue to roast the chicken until instant-read thermometer reads
165 F about 30 minutes more.
