MONGOLIAN BEEF IN THE CROCK POT by CHEF DAN:
Serves

INGREDIENTS:
1-pound
flank steak, cut into bit-size pieces
1/4-cornstarch
2
tablespoon olive oil, divided
1
onion, thinly sliced
2
carrots, thinly sliced
2
garlic cloves, smashed
3
scallions, bias sliced in 1/2-inch lengths
1/2-cup
soy sauce
1/2-cup
water
1/2-cup
brown sugar
1/2-cup
hoisin sauce
1/4-cup
mirin
1
thumb-size fresh ginger, minced
DIRECTIONS:
1.
Place
the flank steak and cornstarch in a zip-lock bag.
2.
Shake
the bag to evenly coat the steak with cornstarch.
3.
Let
rest 20 minutes.
4.
Heat
1 tablespoon oil in a skillet over medium-high heat when sizzling.
5.
Add
onions and carrots and sauté for 4 minutes.
6.
Add
garlic, scallions and sauté 1 minute.
7.
Add
to crock pot.
8.
Add
remining oil; add steak and cook until browned, 2-4 minutes.
9.
Add
to crock on top of onions and carrots.

Add
soy sauce and remaining ingredients to the crock pot.

Cook
on low for 4 hours.

Serve
over rice.
