EGG AND CHEESE BURGERS

BURGER:
1-1/3-pound
80% lean ground beef
2 jalapenos,
seeded and finely minced
3 scallions,
finely chopped
2 tablespoon
Worcestershire sauce
Johnny’s
seasoning salt to taste
1/2
teaspoon EACH black pepper, ground ginger, garlic powder and curry powder
2 tablespoons
olive oil or butter
TOPPINGS:
4
slices Monterey pepper jack cheese
4-slices
aged Swiss cheese
2
teaspoon stone-ground mustard
2
tablespoon butter
4 eggs
4
slice red onion
4
romaine lettuce leaves, crisp and fresh
4
slices, tomatoes
4
hamburger buns
SPECIAL
SAUCE:
1/2-cup
mayonnaise
1
tablespoon horseradish
1
garlic clove finely minced
1
teaspoon lemon juice
2
teaspoons Tabasco Chipotle Pepper Sauce
DIRECTIONS:
1.
Mix
beef and next 8 ingredients together, mix only enough to combine.
2.
Shape
into 4 big patties.
3.
Let
rest in the frig for 30 minutes.
4.
In
bowl whisk together all sauce ingredients, place in the refrigerator for 20
minutes.
5.
In
a skillet add oil over medium-high heat and when sizzling.
6.
Add
hamburger patties, cook for 2 minutes until a nice sear is accomplice.
7.
Flip
and cook for 5 minutes; then flip again; cook another 3 minutes.
8.
In
another skillet add butter over medium-heat and when sizzling.
9.
Add
eggs and cook 2 minutes each side, place on plate.
10. Brush the buns with butter and pan-fry
until browned.
BUILDING:
Spread
a heaping tablespoon sauce from the frig onto each side of the bun.
Add
hamburger, cheese, mustard, fried egg, tomato sliced onion, slices, and lettuce,
