LADY BIRD"S PEDERNALES RIVER CHILI ENJOY DAN:


COPY CAT LADY BRID’S PEDERNALES RIVER CHILI by CHEF DAN:
Serves 8-12   (from Emery Lindgard)

INGREDIENTS:
4 pounds beef (chuck)
1 large onion, chopped
2 garlic cloves, minced
1 teaspoon ground oregano
1 teaspoon ground cumin
6 teaspoons chili powder (to taste)
2 1-poundcans tomatoes, not drained
Salt to taste
2 cups hot water

DIRECTIONS:
1.   Put meat, onion, and garlic in a large, heavy pan.
2.   Sear until lightly colored.
3.   Add oregano, cumin, chili powder, tomatoes, salt, and pepper to taste and hot water.
4.   Bring to a boil.
5.   Lower heat and simmer for about one hour.
6.   As fat cook out, skim.
