CHOCOLATE COCONUT PANCAKES by

Makes
4 pancakes
PANCAKES:
1
cup coconut flour
2
tablespoons unsweetened cocoa powder
3
eggs lightly beaten, separated
1
teaspoons EACH baking powder, and baking soda
2
tablespoons pure maple syrup
1/3-cup
coconut milk
1
tablespoon coconut oil, melted
1/4-teaspoon
vanilla extract
1/3-cup
mini chocolate chips
1/4-teaspoon
sea salt
DIRECTIONS:
1.
Heat
the skillet to high heat.
2.
Beat
the eggs yolks, coconut milk. Syrup, extract, and salt in a bowl.
3.
Set
aside.
4.
Combine,
coconut flour, cocoa powder, baking powder and baking soda
5.
Add
to the egg yolk mixture.
6.
Fold
the flour egg mixture into the egg whites in three increments.
7.
Finally
add the chocolate chips.
8.
Use
coconut oil to grease the skillet.
9.
Use
1/4-cup of batter for each pancake.

Cook
and flip when sides are firm, and bubbles start to form on top.

Enjoy
with a sprinkle of toasted coconut, fresh fruit, yogurt, whipped cream, and chocolate
if desired.
